ONE of Melbourne's top chefs is warming up winter at Dandenong's MadCap Cafe with a unique harira soup.
MoMo's Greg Malouf, an ambassador for MadCap, has concocted the special recipe, which will be added to the cafe's menu later this month.
Mr Malouf said Harira was a traditional North African soup of lentils, chickpeas, herbs and spices, used to break Ramadan.
"Although it's made throughout the year, harira is best-loved by Moroccans during the month of Ramadan when it's frequently served to break the fast at sunset."
About 40 per cent of MadCap's staff are clients of Eastern Regions Mental Health Association. ERMHA chief executive officer Peter Waters said it was "unbelievable that somebody of Greg's calibre" had contributed a signature dish to MadCap.
"We haven't finalised it yet, but what we're planning to do is ask each of our chef and restaurateur ambassadors to design a signature dish that we can use at MadCap."
The cafe is next to Angus and Robertson Book World at the Dandenong Plaza.
